Seafood Salad with Shrimp, Crab and Scallops
Personal Story:
Reflecting back on when I lived in Baltimore, I was inspired by a lunch that a lady friend had suggested I join her on. We were on the bay in sort of a shack like looking building. The food there was amazing and because I was working and it was hot outside I took her suggestion and tried the seafood salad, prominently showcasing crab meat. Its rich flavor left a lasting impression, prompting me to recreate this experience through my own version of a seafood salad that albeit may not be exactly as I had, it’s still perfect for any occasion.
Recipe Overview:
This enhanced seafood salad brings together the sweetness of crab meat with the succulence of shrimp and the optional addition of scallops, dressed in a light citrus vinaigrette. It’s an opulent yet refreshing dish that’s ideal for gatherings or a luxurious solo treat.

Ingredients:
• 1/2 lb cooked shrimp, peeled and deveined
• 1/2 lb crab meat, preferably lump or jumbo lump
• 1/4 lb scallops, cooked and halved (optional)
• 1 medium cucumber, diced
• 1 bell pepper (any color), diced
• 1/4 cup red onion, finely chopped
• 1/4 cup fresh cilantro, chopped
• 1 lime, juiced
• 1/4 cup mayonnaise
• Salt and pepper to taste
Substitutions:
• If crab meat is not available or if you’re looking for a less expensive alternative, imitation crab (surimi) can be used. It still offers a similar texture and a mild flavor that complements the other ingredients. • For those avoiding citrus, a light dressing of olive oil and apple cider vinegar can be a refreshing substitute.
Cooking Process:
1. In a large bowl, combine the cooked shrimp, crab meat, and scallops if using, along with the cucumber, bell pepper, and red onion.
2. Mix in the mayonnaise with the seafood mixture and gently toss to ensure everything is well coated.
3. Sprinkle chopped cilantro over the top and give it another gentle mix.
4. Chill the salad in the refrigerator for about 30 minutes to let the flavors meld together before serving.

Finance and Home & Garden Tips:
Buying crab meat during peak season can often be more cost-effective. Alternatively, consider using canned crab meat, which can be more budget-friendly and still offer great flavor for this type of salad.
Pairing Suggestions:
This salad pairs beautifully with a buttery Chardonnay, which complements the richness of the crab and the brightness of the citrus dressing. For sides, consider a light arugula salad or a fresh baguette to complete the dining experience.
